Veg Colorful Combo

This is a super easy meal.I made this for dinner one night when I got totally bored of chapatis.The menu consisted of
1.Yellow rice
2.Aloo mattar
3.Veg salad
Okay the picture doesn't really do justice but anyways.
Method

1.Yellow rice
Just add a pinch of turmeric to water and boil the rice till its cooked.It looks appealing when served with the curry and the salad.As they say, feasting begins with the eyes and ends up in the tummy.

2.Aloo Mattar:
Boil potatoes and peas.Drain and keep aside.
Sautee onions in a little oil.Add some jeera and fry till onions brown lightly.
Then add 2 tomatoes and a little tomato puree to balance the sour taste.
Add a little turmeric powder, chilly powder, salt, garam masala and some coriander powder.
Keep stirring till all the masala comes together and becomes dry
Then tip in the potatoes and peas and a glass of water.Let it simmer till the potatoes and peas get coated with the masala and the curry thickens.
Garnish with a handful of freshly chopped coriander leaves.

3.Salad
Cut up cucumber, onions, carrots,tomatoes, capsicum.Add some salt, pepper and lemon juice.Stir well. Salad is done.

Serve hot.
