I have always made biriyani in my own special way where I make the rice and chicken curry separately and then arrange the rice on the curry to let it sim.Its not authentic but it works for me.This time I saw a lady preparing biriyani in a pressure cooker and the final product looked perfect so I couldn't wait to try it.
First the chicken curry was made in a pressure cooker. Rice was half-cooked in a separate vessel in excess water. Then in a big pressure cooker she arranged the chicken curry and rice in layers.Each layer of rice was lavishly garnished with ghee , fried onions,coriander leaves and cashew nuts.Then she let it sim for 20 mins and thats it.
I tried it and this is what my biriyani looked like.
